Cheese Grits Souffle

Every true southerner loves grits. GRITS also stand for "Girls Raised in the South", but that's not the kind of grits I'm talking about here!

Back in the day, grits were a staple of southern cooking. They were never treated as just a breakfast item. They took the place of potatoes in meals. The following is my favorite grits recipe, taken from "Cross Creek Cookery" by Marjorie Kinnan Rawlings. Hope you enjoy it as much as my family and I do.

Cheese Grits Souffle

Blend
1/2 of cheese grits (grits made with sharp cheddar cheese), cold
3/4 tsp. salt
1 cup milk, blending well
3 well-beaten eggs

Mix, in order of ingerdients, beating until smooth. Turn into buttered baking dish. Bake at 375 degrees for 45 minutes.

Makes four to six servings.

Enjoyed the site and souffle. You may want to tune into our blog which features Lake Placid, FL as the start and end of a long journey for two young alpacas from Lorida. They are officially heading to Washington, DC to promote NATIONAL ALPACA FARM DAY and various environmental issues, but then moving on to Lake Placid, NY to help make a great relationship begin with "little sister city" Lake Placid, FL. We are carrying Caladium seeds and many gifts from Florida for the NY end of things.

Stephen Colbert and B. B. King, two Florida Alpaca Angels, reached their Lake Placid, NY destination and were presented Olympic Golden Medallions for their heroic journey to help bring Lake Placid, FL and Lake Placid, NY into a renewed "sister city" relationship to benefit tourism and much more for the two great locations. Logging in more than 5,000 miles, including visits to our Nation's Capital and many state capitals as well as Niagra Falls, the two young alpacas are heading back home through Willaimsburg, VA and Charleston, SC with more than a dozen news articles commenting on their trip.

Yep, it is officially over 6,000 miles for the zig-zag journey of Stephen Colbert and B. B. King the alpacas from Lorida, FL's Alpaca Angels of The Highlands. What a fantastic journey and the reception in Charleston, SC was superb...where they got to tour an art gallery (beautiful scultures) with Miss Kitty--the curator who explained some of the pieces as the alpacas examined them. The two were invited into wedding photos on an elevated gazebo with a lovely Columbus, Ohio couple. Then they "toured the town" visiting historic sites and waterfront parks before leaving for Jacksonville, FL where they went to the home of the Jaguars and Maxwell House Coffee. But later, they were at Ponce de Leon's fort in St Augustine and saw the oldest wooden school house in America before moving on to The Farm of Eden they call "home base." On Thursday, October 18th, they are to receive a "hometown heroes welcome" back at the Lake Placid, FL Chamber of Commerce with President Eileen May and several newspaper reporters and others. These two alpacas have earned their medals...and will continue to promote alpaca ownership, fleece and various activities such as the Florida Alpaca Breeders Association Fall event in Ocala (Oct. 20, 21) and then THE FLORIDA CRACKER TRAIL RIDERS "Ho-Down" the next weekend at Hickory Ridge and the Sebring Art Festival on November 10th. We all hope to see folks come out for these events and meet the alpaca heroes.

LAKE PLACID'S MAYOR THOMAS A. KATSANIS VISITS COLBERT & KING

While waiting to pick up 40 bags of feed this evening, there were
knocks at the door. We greeted Bob and Harriet Porter of The Lake
Placid, Florida "Mural Society" which initiated and continues the
spendid wall murals of "The Town of Murals." They had brought an
interesting friend, Mayor of Lake Placid, Florida, Mr. Thomas A.
Katsanis. He was interested in learning about our alpacas and in
meeting the two world famous ones, Stephen Colbert and B. B, King,
that made the month long historic journey up to Lake Placid, New York
and back during the celebration of NATIONAL ALPACA FARM DAY week (and
longer). Mayor Katsanis was very interested in hearing all about the
journey and the amazingly wonderful reception given the two alpacas in
New York's Olympic Village setting high among the Adirondacks. He
found that the we shot the journey with two high Definition Video
Cameras and visited many cities, towns, historic sites, and beautiful
places, viewing as though through the eyes of our Alpaca Angel Agents
007 (Colbert) and 99 (King). After touring The Farm of Eden and
seeing how we manage the herd and after meeting the two heroic
alpacas, the Mayor was given a number of news articles from several
papers that did stories and photos related to the round trip journey.
The Town Council of Lake Placid, Florida and the Chamber of Commerce
and The Mural Society are working together to bring about the dialogue
and whatever proclamations necessary to co-create a permanent "sister
city" relationship with Lake Placid, New York. We appreciate his
visit and that of the Porters, wishing the many friends we have in
both terrific towns the very best of success in this historic
endeavor. May God bless our Lake Placids.

Stephen Colbert, B B King, Bocelli and Boomer Times are alpaca coming to Avon Park, in Highlands County, FL on Saturday, 5-8 PM to be involved in a terrific festival for the community. Over 4,000 folks expected...see ya there.

Our Florida Alpaca Adventure continues with invitations to be at several events...some on the very same day. Twelve Hours of Art Festival at Sebring Circle is Saturday, Nov. 10th, where four antlered alpacas will help escort people to various vendors and businesses. NEWS SUN had two major articles in Sunday's Nov. 4th edition, front page news. It's getting to be a lot of fun with the workload. I've been invited to speak about the trip to Lake Placid's Chamber of Commerce.

Ahhhh, B. B. King and his friend Humz took the Sebring Art Festival by surprize when they showed up wearing antlers and big red ribbons. Many folks thought they were some sort of fake display as they stood still often looking at the festival activities around them. When they did walk, hundreds of people took photos of the two "alpaca-dears" visiting the festival.
